I’m definitely seeing more great restaurants opening in further reaches since the pandemic - I’m writing this from 90 minutes outside Portland, Oregon, where I’ve been eating so well the last few days. I think chefs are increasingly realizing that they don’t need to be in a city to find willing diners these days.
